Heeyoung's Lemongrass Chicken

Ingredients:

Chicken marinade:

  • 4 chicken thighs (flatten meat with meat hammer)

  • 4 Tbsp mirin

  • 1 tsp minced ginger

  • 2 Tbsp minced lemongrass paste

  • 2 Tbsp fish sauce

  • 1 Tbsp light soy sauce

  • 1.5 Tbsp honey or sugar

  • White pepper (to season)

  • Salt (to season)

Spring Onion sauce:

  • 1 bundle of spring onion, finely chopped

  • 2 Tbsp olive oil

  • 1 Tbsp minced ginger

  • 1 tsp sesame oil

  • 1/2 tsp salt

  • White pepper (to season)

Optional:

  • Jasmine rice (with light soy sauce & chili sauce)

  • Fried egg

Steps:

  1. Flatten chicken thigh with meat hammer

  2. Make chicken marinade and marinade chicken for at least 2 hours in fridge

  3. Make the spring onion sauce and leave aside

  4. Heat oil on high in pan then reduce heat to medium (since sugar and fish sauce might burn)

  5. Add marinated chicken thighs on pan over medium heat until both sides are golden brown (around 5min on each side)

    • To check if meat is cooked, use a sharp knife to poke the meat and if clear juice comes out, then it is cooked

  6. Serve chicken with spring onion sauce, jasmine rice and fried egg
