Erin's Bruschetta

Ingredients:

  • 4 Tbsp Olive Oil

  • 5 Garlic Cloves, minced

  • 1 pint Red Cherry Tomatoes, halved

  • 1 pint Yellow Cherry Tomatoes, halved

  • 1 Tbsp Balsamic Vinegar

  • 1 Baguette, sliced into 1/2 inches

  • 25 Basil leaves, chopped

  • Salt & pepper

  • Mozzarella

  • 1 stick of Butter (optional)

Steps:

  • In a small skillet, heat olive oil. Add garlic and stir until lightly toasted. Remove and cool.

  • Put cherry tomatoes, balsamic vinegar, basil, salt & pepper, olive oil and garlic in a bowl. Mix and refrigerate for an hour.

  • Optional: Melt 4 Tbsp butter in a pan/skillet and add baguette slices. Toast both sides and add more butter and baguette slices (bread will turn brown)

  • Put baguette slices on baking sheet, and top each slice with a slice of mozzarella. Broil until cheese melts (about 5 minutes).

    • If did not toast with butter, then brush one side of each slice with olive oil and place olive side-side down on a baking sheet

  • Take out of oven and top each slice with tomato mixture and serve.
