Shannon's Balsamic Roasted Cauliflower Dip

Ingredients:

  • 1 Cauliflower head

  • 3 cloves of Garlic

  • Splash of Balsamic

  • 1 Tbsp of Caraway seeds (or fennel seeds)

  • Olive oil

  • Salt & pepper

Steps:

  • Chop cauliflower head into florets and slice garlic

  • Preheat oven to 350F degrees and roast cauliflower florets with olive oil, garlic, salt & pepper for 20 minutes

  • Add roasted cauliflower in food processor with caraway seeds and balsamic vinegar and blend together (taste and add more caraway seeds and balsamic vinegar if needed)

  • Optional: Serve with bagel crisps, pretzel bites or pita chips
