Shannon's Balsamic Roasted Cauliflower Dip
Ingredients:
1 Cauliflower head
3 cloves of Garlic
Splash of Balsamic
1 Tbsp of Caraway seeds (or fennel seeds)
Olive oil
Salt & pepper
Steps:
Chop cauliflower head into florets and slice garlic
Preheat oven to 350F degrees and roast cauliflower florets with olive oil, garlic, salt & pepper for 20 minutes
Add roasted cauliflower in food processor with caraway seeds and balsamic vinegar and blend together (taste and add more caraway seeds and balsamic vinegar if needed)
Optional: Serve with bagel crisps, pretzel bites or pita chips
