Mama Lampert's Tuna Salad
Ingredients:
2 Canned Tuna (in olive oil, not water)
1/4 Large red onion (or 1/2 small red onion), finely chopped
2 Celery stalks, finely chopped
1/4 cup Parsley (preferably flat leaf), finely chopped
2 Tbsp Mayo (recommend Sir Kensington’s Mayo)
1 Lemon, squeeze for juice
Salt & pepper to taste
Dill (optional)
Canned olives, finely chopped (optional)
Steps:
Squeeze out excess oil from canned tuna and put into bowl
Finely chop red onion, celery, and parsley and add into bowl
Add mayo and squeeze lemon into the bowl and mix altogether
Add salt and pepper to taste (add more of any ingredient based on your taste)
Serve on top of toast with melted cheese (tuna melt) or with crackers
