Mama Lampert's Tuna Salad

Ingredients:

  • 2 Canned Tuna (in olive oil, not water)

  • 1/4 Large red onion (or 1/2 small red onion), finely chopped

  • 2 Celery stalks, finely chopped

  • 1/4 cup Parsley (preferably flat leaf), finely chopped

  • 2 Tbsp Mayo (recommend Sir Kensington’s Mayo)

  • 1 Lemon, squeeze for juice

  • Salt & pepper to taste

  • Dill (optional)

  • Canned olives, finely chopped (optional)

Steps:

  • Squeeze out excess oil from canned tuna and put into bowl

  • Finely chop red onion, celery, and parsley and add into bowl

  • Add mayo and squeeze lemon into the bowl and mix altogether

  • Add salt and pepper to taste (add more of any ingredient based on your taste)

  • Serve on top of toast with melted cheese (tuna melt) or with crackers
