Giulia's Tiramisu
Ingredients:
100g (1/2 cup) Granulated Sugar
300g (about 24) Ladyfingers or Savoiardi biscuits
500g (little over 2 cups) Mascarpone
4 Medium Eggs
Coffee
Cocoa powder
Steps:
Separate the whites from the egg yolks
Whisk the egg yolks and add in half the sugar, then gradually add all the mascarpone, mix until pale
Use electric mixer to whisk the egg whites, slowly adding in the remaining sugar and making sure you keep going until it becomes solid (don’t overdo it or it will disintegrate)
Slowly spoon the whites into the yolk and mascarpone mix, making sure you don’t lose the fluffiness
Dip the biscuits in the coffee and line the baking dish
Add a layer of cream
Repeat the same with another layer of coffee soaked biscuits
Add a layer of cream
Refrigerate for minimum of 2 hours (best is overnight)
Sprinkle cocoa powder on top when you’re ready to serve
