Sofi's Tortilla Española

Ingredients:

Yellow potatoes

Olive oil

Salt

One clove of garlic

6 eggs per tortilla

Steps:

  1. Peel and dice potatoes

  2. Add a lot of olive oil, salt, one clove of garlic and potatoes into saucepan and put cover over on low heat and cook until soft.

  3. Take potatoes out of saucepan into separate bowl/plate. Leave olive oil in pan (use for next batch of potatoes).

  4. Crack 6 eggs into bowl and stir

  5. Add cooked potatoes in bowl. Ratio should be 1:1 (eggs to potato)

  6. Add mixture of eggs and potatoes into saucepan with olive oil on medium/high heat

  7. Wait until bottom and sides of tortilla is cooked. Use plate to flip over. Cook until other side is cooked, even if gooey inside still
