Mama Kawser's Chicken Soup
Ingredients:
Chicken breast
4-6 Cloves of Garlic
Ginger
1 Bunch of Cilantro
Onions
Leek
Scallions
Chicken stock powder
Light soy sauce
Dark soy sauce
Black pepper
Optional: onions, scallions, soft-boiled egg (in boiling water for 8 minutes)
Steps:
1. Finely chop garlic, ginger, cilantro stems
2. Chop chicken breast into small pieces. Throw canola oil with garlic, ginger and cilantro stems and scallions into pot and stir for 2-3 min (until aroma arises)
3. Throw in chicken and drizzle light soy sauce, dark soy sauce and generous pour of chicken stock. Cook until chicken is sealed
4. Add onions and leek
5. Add boiling water and garnish with more cilantro leaves and scallions
6. Boil soup for at least 10min
7. Optional: Add eggs once water is boiling. Cook for 8 min.
9. Optional: Make Thai chili pepper & white vinegar sauce and Roasted garlic oil
10. Chop up Thai chili pepper and add white vinegar
11. Finely chop garlic and cook in canola oil until golden
