Grilled Chicken and Veggie Kabob
Recipe taken from Dinner at the Zoo
Ingredients:
1 lb Chicken breast
1 Red bell pepper
1 Yellow bell pepper
2 Zucchini
1 Red onion
1 Tbsp Chopped Parsley (optional, for garnish)
Marinade Ingredients:
1/4 cup Olive oil
1/3 cup Soy sauce
1/4 cup Honey
1 tsp Minced garlic
Salt and pepper to taste
Steps:
Cut chicken breast, bell pepper, zucchini and red onion into 1 inch pieces and add into large bowl
Mix olive oil, soy sauce, honey, minced garlic, salt and pepper in a bowl
Add marinade to bowl with chicken and vegetables and toss to coat
Marinate chicken and vegetables in fridge for at least 8 hours
Thread chicken and vegetables onto skewers
Heat grill to high heat (500F degrees) and cook skewers for 5 minutes on each side (or until chicken is cooked through)
Sprinkle with parsley and serve
