Grilled Chicken and Veggie Kabob

Recipe taken from Dinner at the Zoo

Ingredients:

  • 1 lb Chicken breast

  • 1 Red bell pepper

  • 1 Yellow bell pepper

  • 2 Zucchini

  • 1 Red onion

  • 1 Tbsp Chopped Parsley (optional, for garnish)

Marinade Ingredients:

  • 1/4 cup Olive oil

  • 1/3 cup Soy sauce

  • 1/4 cup Honey

  • 1 tsp Minced garlic

  • Salt and pepper to taste

Steps:

  • Cut chicken breast, bell pepper, zucchini and red onion into 1 inch pieces and add into large bowl

  • Mix olive oil, soy sauce, honey, minced garlic, salt and pepper in a bowl

  • Add marinade to bowl with chicken and vegetables and toss to coat

  • Marinate chicken and vegetables in fridge for at least 8 hours

  • Thread chicken and vegetables onto skewers

  • Heat grill to high heat (500F degrees) and cook skewers for 5 minutes on each side (or until chicken is cooked through)

  • Sprinkle with parsley and serve
