Mama Chin's Spicy Pork Bulgogi (돼지 불고기)

What is it?

Korean dish of thinly sliced marinated pork grilled on a barbecue or stove-top griddle that is spicy, savory and sweet.

Ingredients:

  • 1lb Thinly sliced pork (neck, shoulder or hind leg)

  • 1 Yellow onion diced

  • 1 Tbsp Ginger (if using pre-made sauce)

  • 1/4 cup sliced Green onions

  • 1 Tbsp Cooking oil

  • 1/4 cup Mirin (rice wine)

  • Sesame seeds (optional for garnish)

Marinade Ingredients (from Kimchimari):

  • 2 Tbsp soy sauce

  • 2 Tbsp Korean red pepper bean paste (고추장 gochujang)

  • 2 Tbsp cooking rice wine or mirin

  • 3 Tbsp sugar

  • 1 Tbsp sesame oil

  • 1 Tbsp sesame seeds

  • 1 Tbsp chopped garlic

  • 1 Tbsp grated or chopped fresh ginger

  • 1 Tbsp chopped green onions

  • 1/4 tsp garlic powder

  • 1 tsp Korean red chili powder (고추가루 gochugaru) +1 tsp to taste

  • 1/4 tsp black pepper

  • OR use pre-made Dweji Bulgogi sauce (I like the Chung Jung One brand)

Steps:

  • Make the marinade by mixing all the marinade ingredients above

  • Mix the pork slices, mirin and marinade (or pre-made sauce) together and marinate in the fridge overnight

  • Sauté onions with cooking oil until translucent

  • Add ginger (if using pre-made sauce) and marinated pork into pan and cook until slightly caramelized

  • Add green onions into pan in last minute of cooking

  • Sprinkle sesame seeds and serve with rice
